Roasted Tomato Soup

The weather was a bit on the chilly side last night and today, so I don’t feel as bad about showing up with a soup recipe in the brighter spring days!
To make this hearty and cozy Roasted Tomato Soup you’ll need:

1 Red Bell Pepper
1 Head of Garlic
3 Shallots / or 1 Medium Onion
2 ½ Cups Grape or Cherry Tomato
¼ Cup Fresh Basil Leaves
A Couple of Fresh Thyme Sprigs
1 ½ Cup Vegetable Stock
½ Cup Light Cream (optional)

Salt & Pepper to Taste
1 Teaspoon Onion Powder
1 Teaspoon Garlic Powder
1 Teaspoon Sugar
1 Teaspoon Italian Seasoning
1 Teaspoon @badiaspices Sazon Tropical Seasonig
½ Teaspoon Red Chili Flakes (optional)

Now let’s go back to how I made this delicious Roasted Tomato Soup Recipe:

🍅 Cut the veggies in even size pieces, arrange them on a baking sheet, and add all the seasonings.
🍅 Drizzle seasoned veggies with olive oil, give everything a mix, and place the tray in a 400F preheated oven. 
🍅 Bake until vegetables are softened, about 40-50 minutes. Halfway through the roasting, I gave the veggies a mix, to ensure even cooking.
🍅 Take roasted veggies out of the oven, set them aside to cool off a little, then transfer them to the blender.
🍅 Add fresh basil, light cream, and squeeze the roasted garlic out of its skin. Blend until puréed.
🍅 Transfer soup to a medium pot, add stock, mix and cook over medium heat until it starts the bubble.
🍅 Serve and enjoy with your favorite toppings. I like mine with Burrata cheese and crackers. My boys like it with Tortellini, so I made sure I had it on hand. Gotta make them boys happy 🤩💖
