Salmon Crudo

Next up – Salmon Crudo! 🍣πŸ₯—
First, allow me explain the difference between Salmon Sashimi, Crudo, and Ceviche:
🍣 With Sashimi, the sushi grade raw fish is slightly dipped in soy sauce to finish off the dish. 
🍣 Crudo style is topped with olive oil, citrus, or some type of dressing to enhance the dish. 
🍣 Ceviche is also a raw seafood dish; however, preparing it involves curing fresh seafood with lime or lemon juice.

Now for the ingredients to prepare your Salmon Crudo:

For the salad:
🍣 Sushi grade salmon
🍣 Cucumber
🍣 Radish
🍣 micro-greens
🍣 Wasabi or wasabi mayonnaise 

For the dressing:
🍣 2 small shallots
🍣 3 tablespoons capers
🍣 2 tablespoons capers juice (brine)
🍣 2 tablespoons chives
🍣 2 tablespoons dill
🍣 1 tablespoon soy sauce
🍣 1 teaspoon mustard 
🍣 1-4 cup olive oil
🍣 Juice of half a lemon

Let’s make Salmon Crudo:
🍣 Gather all the ingredients listed in my previous post.
🍣 Start by making the relish/dressing: Pulse shallots and capers in the food processor, until a chunky paste is formed. Transfer it to a bowl; add the mustard, capers juice, chopped dill, chives, soy sauce, lemon juice, olive oil; andmix until well combined.
🍣 Slice cucumbers and radishes and start assembling your salad. First spread a layer of the relish/dressing on the plate, then arrange cucumber and radish slices on top. Addanother layer of relish and a drizzle of wasabi spread, and arrange the sliced sushi grade salmon on top. 
🍣 Sprinkle more chopped dill, chives, sliced jalapeno and micro-greens on top and finish it with a drizzle of soy sauce.
