Here’s everyone’s favorite! Texas Caviar, Bean Dip, Cowboy Caviar, Bean Sala, whatever you call it, it’s delicious, colorful, and refreshing!
The perfect appetizer for Cinco De Mayo, Taco Tuesday, or just any day. It’s a great make-ahead recipe too.
For the Salad:
🥗 1 can beans, rinsed and drained
🥗 1 can corn, drained
🥗 1 medium red onion, diced
🥗 3 colored peppers, diced
🥗 3 small tomatoes, deseeded and diced
🥗 1 jalapeno pepper, deseeded and diced
🥗 2 mangoes peeled and cut into small cubes
🥗 2 Avocados, cut into small cubes
🥗 ½ cup finely chopped cilantro
For the Dressing:
🍾 ¼ cup olive oil
🍾 2 tablespoons grape vinegar
🍾 2 tablespoons of pineapple or orange juice
🍾 2 tablespoons honey
🍾 2 tablespoons taco seasoning
🍾 Juice of 2 limes
🍾 Salt & Pepper to taste
🍾 Chili pepper flakes (optional)
Tortilla Chips for serving.

🥑 First, gather the ingredients listed in the previous post. Wash and drain beans, drain corn, dice and cut all the veggies and mangoes into small cubes, and transfer them them to a large bowl.
🍅 Add olive oil, pineapple juice, honey, lemon juice, vinegar, salt, and taco seasoning to a jar; secure the lid on and shake it well until all the dressing ingredients are well combined.
🫑 Drizzle dressing over the salad and enjoy with your favorite tortilla chips or pair it with your favorite grilled protein. I like it with grilled chicken and shrimp… Delish 👌🏻
