This was a spur of the moment meal, that I just happened to have all the ingredients needed to make it handy … Tuscan Seafood Pasta.
This tasty Tuscan penne pasta dish is packed with scallops, mussels, homemade sun-dried tomatoes, baby spinach, fresh onion and garlic; and cooked with extra virgin olive oil infused with rosemary, thyme and garlic. It’s creamy, rich, and super delicious.
Here’s what you’ll need:
🍝 1 box pasta
🍝 1 pound scallops
🍝 1/2 pound cooked mussels
🍝 1 small onion or shallot
🍝 5 garlic cloves
🍝 1/3 cup Sundried Tomatoes
🍝 1/2 teaspoon chili pepper flakes (optional)
🍝 1 cup baby spinach
🍝 1 cup cream or Half & Half
🍝 1/2 cup of pasta cooking water
🍝 Grated cheese and fresh parsley for topping
🍝 Salt & Pepper to taste
🍝 Add a drizzle of olive oil to a frying pan. Add in the scallops and sauté over a medium heat for about three minutes. Add the cooked mussels, season with salt and pepper to taste, and sauté together with the scallops for 2 minutes. Transfer seafood to a plate and set aside.
🍝 Using the same pan, add another drizzle of olive oil. Add in the diced onion and cook over medium heat until softened and fragrant, about 3 minutes.
🍝 Add minced garlic and cook for 2 more minutes. Add the sun-dried tomatoes, red pepper flakes, and add cooked mussels and scallops back in the pan.
🍝 Add in Half & Half or cream, baby spinach, pasta cooking water, salt and pepper to taste, give everything a good mix, then cover the pan and bring the sauce to a light boil.
🍝 Add cooked pasta to the pan and mix it well with the sauce. Garnish with fresh parsley and your favorite grated cheese.
