Italian Antipasto Pasta Salad 

Easy Italian Antipasto Pasta Salad 🇮🇹🥗
Loaded with flavor and so easy to make!
Rotini pasta, grape tomatoes, mozzarella cheese, black and green olives, artichoke hearts, salami, cherry and banana peppers, tossed with a delicious homemade zesty Italian vinaigrette… Delicious 🇮🇹🥗

To make the dressing, you’ll need:
🍾 1/2 cup olive oil
🍾 1/4 cup grape vinegar 
🍾 2 garlic cloves, minced
🍾 1 tablespoon Italian seasoning
🍾 1/2 teaspoon red pepper flakes 
🍾 Salt & Pepper to taste 
👩🏻‍🍳 Add all the ingredients to a jar and shake well to combine.

For the pasta salad:
🥗 2 cups pasta; I used Rotini
🥗 1 cup grape tomatoes, halved
🥗 1 jar marinated artichoke hearts, drained
🥗 1 cup mozzarella pearls
🥗 ⅔ cup pitted olives. I used a mix of Kalamata and green olives 
🥗 1 cup assorted sweet cherry peppers and peperoncini
🥗 8 ounces chopped salami
👩🏻‍🍳 Boil the pasta for 2 minutes less than the package instructions; make sure it’s cooked just al-dente. Drain and transfer it to a mixing bowl, toss it with a little olive oil so it doesn’t stick together, then set it aside until it’s completely cooled.
👩🏻‍🍳 Add all the remaining ingredients, shake the dressing very well and pour it over the salad. Mix and enjoy!
