Beef Stew Orecchiette 

Hope you all had a wonderful holiday weekend! Right about now, I’m sure you could use a cozy comforting meal that doesn’t include turkey.

To make this delicious comforting beef stew orecchiette, you’ll need:
🍝 1 package orecchiette or any other pasta you have on hand
🍝 1 pound beef cubes
🍝 2 tablespoons olive oil
🍝 1 medium onion, diced
🍝 2 celery stalks, diced
🍝 2 carrots, diced
🍝 3 garlic cloves, minced
🍝 1 bay leaf
🍝 1 1/2 cup beef or chicken stock
🍝 Salt & Pepper to taste
🍝 1/2 cup grated Parmesan cheese
🍝 2 tablespoons butter
🍝 A handful of chopped parsley 

🍝 In a deep pan, heat olive oil and sauté the decried onion, celery and carrots for 3 minutes.
🍝 Add the meat, toss it with the veggies and cook together for 3 more minutes.
🍝 Add bay leaf, minced garlic and the stock. Cook until the liquid reduces to half, then cover with boiling water, reduce heat, and bring to a simmer. Season with salt and pepper, cover the pan and cook until the meat is fork tender.
🍝 Cook pasta al-dente and add it to the cook beef stew. Toss them together on high heat, then turn the heat off and add the butter, parsley and grated cheese. Mix together, serve and enjoy.
