Panini a la Ruby

August is National Panini Month‼️Which means get out your panini press, break the old sandwich habit and panini away like there is no tomorrow‼️
And if you’ve already given my last two recipes a try and have a batch of pesto sauce and a batch of grilled veggies on hand, then you’re all set! Just get some flat bread or baguette and make’em delicious hot paninis ♨️

Made with fresh ingredients and lots of love ❤️
I spread a generous amount of my homemade green pesto on one flat bread and red pesto on the other, and layered my yummy fillings in between 🥪👌🏻
I made half of the Paninis with fresh baby spinach, grilled chicken, roasted pepper, grilled onion and fresh mozzarella cheese.
The other half, I made with my brined grilled eggplant, zucchini, onions, peppers and fresh mozzarella cheese slices.
Lastly, I brushed the paninis with a little olive oil, cut them each in half, then pressed them in the panini maker until nice and toasty.
They were DELICIOUS 😍
