Green and Red Pestos

Green Pesto was the very first recipe I shared when I launched Ruby’s Kitchen page 💚
Making Pesto Sauce is such an easy and quick process!

🌿🌿Green Pesto🌿🌿
2 cups fresh basil leaves 
3 cloves garlic
1/3 cup pine nuts
1/2 cup grated Parmesan cheese
1/2 cup olive oil
Salt & pepper to taste
👩🏻‍🍳Pulse all the ingredients in the food processor until well incorporated and VOILA!!

🍅🍅Red Pesto🍅🍅
1/4 cup toasted walnuts 
1/4 cup toasted cashews 
1 cup (8 ounces) sun-dried tomatoes packed in oil
3 garlic cloves
3/4 cup grated Parmesan cheese
Salt & Pepper to taste
1/4 teaspoon chili flakes
1/4 cup roasted red pepper 
1/2 cup olive oil
👩🏻‍🍳Place 1/2 of the sun dried tomatoes and the rest of the ingredients into the food processor and pulse a few times until well chopped.
Add the rest of the sun-dried tomatoes with the oil they’re packed in and the olive oil. Blend until the pesto has a uniform, but not pureed, consistency; and VOILA!!

If you’re not going to use it right away, transfer Pesto to airtight containers, drizzle a generous amount of olive oil on top and refrigerate.
