Lemon Butter Cake

Crispy, buttery bottom similar to the old-fashioned buttermilk donuts, kissed with the refreshing flavor of summer lemons ๐Ÿ‹๐Ÿฐ

Lemon Butter Cake recipe:

For the Cake:
1 cup unsalted butter 
2 cups sugar
3 large eggs
3 cups flour 
1/2 tsp baking soda
1/2 tsp salt
1 cup buttermilk
2 tbsp lemon zest 
2 tbsp lemon juice
A few drops of lemon essence (optional)

For the Glaze:
1/3 cup unsalted butter
3/4 cup sugar
4 tbsp lemon juice

๐Ÿ‹ Cream butter & sugar until light and fluffy. Slowly beat in eggs one at a time, blending well after each addition.
๐Ÿ‹ In another bowl sift together flour, baking soda & salt. Stir flour mixture into egg mixture a few spoonfuls at a time, then slowly add the buttermilk while mixing. Stir in lemon juice and zest and a few drops of lemon essence.
๐Ÿ‹ Pour batter into a greased bundt pan. Bake on 325F for approximately 60 to 70 minutes, depending on your oven. Cake is done when a tester inserted in the center comes out clean.
๐Ÿ‹As soon as the cake comes out of the oven, immediately start making the glaze. Add all the glaze ingredients to a small pan and heat over medium low heat, stirring frequently until butter is melted and sugar is dissolved. 
๐Ÿ‹Poke holes in the top of cake and pour glaze evenly all around the top. Let cake cool completely before inverting it onto your serving plate.
Dust with a little powdered sugar and Voila!!
