Crispy, buttery bottom similar to the old-fashioned buttermilk donuts, kissed with the refreshing flavor of summer lemons ๐๐ฐ

Lemon Butter Cake recipe:
For the Cake:
1 cup unsalted butter
2 cups sugar
3 large eggs
3 cups flour
1/2 tsp baking soda
1/2 tsp salt
1 cup buttermilk
2 tbsp lemon zest
2 tbsp lemon juice
A few drops of lemon essence (optional)
For the Glaze:
1/3 cup unsalted butter
3/4 cup sugar
4 tbsp lemon juice
๐ Cream butter & sugar until light and fluffy. Slowly beat in eggs one at a time, blending well after each addition.
๐ In another bowl sift together flour, baking soda & salt. Stir flour mixture into egg mixture a few spoonfuls at a time, then slowly add the buttermilk while mixing. Stir in lemon juice and zest and a few drops of lemon essence.
๐ Pour batter into a greased bundt pan. Bake on 325F for approximately 60 to 70 minutes, depending on your oven. Cake is done when a tester inserted in the center comes out clean.
๐As soon as the cake comes out of the oven, immediately start making the glaze. Add all the glaze ingredients to a small pan and heat over medium low heat, stirring frequently until butter is melted and sugar is dissolved.
๐Poke holes in the top of cake and pour glaze evenly all around the top. Let cake cool completely before inverting it onto your serving plate.
Dust with a little powdered sugar and Voila!!
