If you decide to make just one kind of cookies this summer, let it be this ooey gooey melt-in-your-mouth S’mores Brown Butter Chocolate Chip cookies!
🍪First prepare the brown butter by melting 2 sticks (1 cup) salted butter in a lightly colored saucepan. Swirl the pan to be sure the butter gets heated evenly. When butter begins to foam, lower heat to medium and whisk constantly. The color will gradually change from lemony-yellow to golden, then to toasty brown. Once it reaches this color and you start smelling the toasty aroma, take the pan off the heat and transfer the brown butter to a heat proof bowl. Once cool to touch, refrigerate until chilled.
To make the cookies:
🍪 In the mixer’s bowl combine 1 cup brown sugar, 1/2 cup white sugar and the chilled brown butter. Mix until well incorporated.
🍪 Add 2 eggs and 1 egg yolk, one at a time, mixing after each addition, then add 1 teaspoon vanilla and continue mixing until all is well incorporated.
🍪 Now add the dry ingredients: 2 1/4 cups flour, 1 teaspoon baking soda and mix.
🍪 Scrape the sides and bottom of the bowl to be sure everything is thoroughly combined.
🍪 Lastly add 1 1/2 cups chocolate chips or cut up chocolate pieces and fold them into the cookies dough until they’re evenly distributed.
🍪 Shape the dough into equal size balls and place them on a silicone mat or parchment paper lined tray. Freeze cookie dough balls until solid.
🍪 Bake frozen cookies on 375F for 10-15 minutes, depending on your oven. If you want just chocolate chip cookies, then at this point your delicious cookies are ready for you to enjoy!
🍪If you want them S’more style, then once the cookies are golden at the edge but still soft in the center, take them out of the oven and place a jumbo marshmallow on top of each, pushing it slightly down into the cookie. Put it back in the oven and bake for another 2 minutes. As soon as it’s out of the oven, place a piece of chocolate on top of the marshmallow. And Voila!
