As a child, I was never able to embrace the idea of having fruit in my salad. To me, fruit was meant to be a healthy snack, something you enjoy in the form of juice, cake or as an ice cream topping, but not in a salad. It wasn’t until I was in mid twenties that I decided to give it a chance; and this grilled peach salad was a game changer for me! It was love from the first bite and definitely proved me wrong 🍑😍
Once you’ve cut and grilled the peaches, this salad comes together fairly quickly. Arrange your grilled peach wedges, blackberries, and burrata cheese on a bed of baby arugula and drizzle it with a little olive oil and balsamic glaze, or add your favorite salad dressing and Voila! 🥗
Grilled Peach Burrata Salad:
🍑 Cut your peaches into wedges and lightly brush them with olive oil.
🍑 Heat your grilling pan and brush it with oil.
🍑Grill peach wedges for 1-2 minutes on each side and set them aside to cool off a little.
🍑 On your serving plate, add a handful of baby arugula and arrange the grilled peach wedges, Burrata cheese and blackberries on top.
🍑Drizzle with some olive oil and balsamic glaze and Enjoy!
