Yellow Gazpacho

💛💛 Yellow Gazbacho 💛💛

Simple, delicious, easy, healthy and refreshing – all in one cup! It’s one of the greatest summer treats, especially when Heirloom tomatoes are in season.

🍅 + 🥒 + 🧅 + 🌶 + 🧄 + 🍾 = Delicious Refreshing Summer Gazpacho (Spanish cold soup); makes a perfectly healthy and speedy lunch on a hot day ☀️ 

To make a batch of yellow Gazpacho, simply process the following mix of ingredients in the blender:

🍅 2 cups yellow tomatoes, chopped
🫑 1 cup yellow bell pepper, chopped
🧅 1 cup white onion, chopped
🥒 1 cup cucumber, chopped
🍇 1/3 cup golden berries, if available 
🧄 2 garlic cloves, smashed
🍎 3 tablespoons apple or pomegranate vinegar
🍾 3 tablespoons olive oil
🧂 salt and pepper to taste
🌶 2-3 dashes of sriracha or hot sauce (optional)

Blend on high speed until all the veggies are puréed and if it’s too thick to be pourable, add 1-4 tbsp vegetable stock to bring it to the desired consistency. I used some very juicy heirloom tomatoes, so I didn’t need to add any stock. I served it with grilled shrimp and breadsticks 🍤🌿🥖
