Yellow Gazpacho

๐Ÿ’›๐Ÿ’› Yellow Gazbacho ๐Ÿ’›๐Ÿ’›

Simple, delicious, easy, healthy and refreshing – all in one cup! Itโ€™s one of the greatest summer treats, especially when Heirloom tomatoes are in season.

๐Ÿ… + ๐Ÿฅ’ + ๐Ÿง… + ๐ŸŒถ + ๐Ÿง„ + ๐Ÿพ = Delicious Refreshing Summer Gazpacho (Spanish cold soup); makes a perfectly healthy and speedy lunch on a hot day โ˜€๏ธ 

To make a batch of yellow Gazpacho, simply process the following mix of ingredients in the blender:

๐Ÿ… 2 cups yellow tomatoes, chopped
๐Ÿซ‘ 1 cup yellow bell pepper, chopped
๐Ÿง… 1 cup white onion, chopped
๐Ÿฅ’ 1 cup cucumber, chopped
๐Ÿ‡ 1/3 cup golden berries, if available 
๐Ÿง„ 2 garlic cloves, smashed
๐ŸŽ 3 tablespoons apple or pomegranate vinegar
๐Ÿพ 3 tablespoons olive oil
๐Ÿง‚ salt and pepper to taste
๐ŸŒถ 2-3 dashes of sriracha or hot sauce (optional)

Blend on high speed until all the veggies are purรฉed and if itโ€™s too thick to be pourable, add 1-4 tbsp vegetable stock to bring it to the desired consistency. I used some very juicy heirloom tomatoes, so I didnโ€™t need to add any stock. I served it with grilled shrimp and breadsticks ๐Ÿค๐ŸŒฟ๐Ÿฅ–
