Irish Soda Bread

Top of the morning to you all, my friends! ☘️☘️☘️ Let’s bake some Irish Soda Bread to celebrate!

You will need:
1 3/4 cups regular flour, 1 3/4 cups whole wheat flour, teaspoon salt, teaspoon baking soda, 2 tablespoons cold butter (cubed), 1 2/3 cups of buttermilk, 1 egg
Egg Wash: 1 egg, buttermilk
Topping: sunflower seeds, oats, flax seeds

Let’s get started:
☘️ In a large mixing bowl, whisk regular flour with whole wheat flour, salt and baking soda
☘️ Dice cold butter into small cubes and rubbed into the dry ingredients by hand until it resembles crumbs 
☘️ In a measuring cup, whisk buttermilk and egg; both should be at room temperature
☘️ Add the liquid to the dry ingredients, gently mixing by hand until a loose soft but not sticky dough forms
☘️ Flip the dough out of bowl onto floured surface and gently shape together into a round loaf
☘️ Transfer to floured baking tray, gently pressing the top down a little and tucking the sides in by hand. Score top with a sharp knife.
☘️ Brush the surface with an egg wash; made by whisking an egg with some buttermilk
☘️ Sprinkle top with sunflower seeds, oats and flax seeds
☘️ Bake in a 425F preheated oven for 15 minutes, then drop the temperature to 400F and bake for another half an hour; and Voila!! ☘️🇮🇪🍞

TIP: Use measuring cups and spoons in all baking, especially bread.
