Smashed Potatoes πŸ₯” πŸ”¨, with Gremolata Topping

You will need: baby potatoes, salt, rosemary sprigs, thyme, balsamic vinegar, parsley, 1 lemon, five garlic gloves, 1/2 cup of grated Parmesan cheese, fresh parsley,


  • Put washed baby potatoes in a deep pot
  • Add a generous amount of salt to the pot
  • Boil potatoes until they are fork tender
  • Then drain the water and dry potatoes with paper towels
  • Season with salt
  • Add fresh thyme
  • Add 1 tablespoon of balsamic vinegar to the pot
  • Add a half cup of olive oil
  • Give it a good mix to make sure the potatoes are evenly coated with this marinade
  • Transfer the potatoes to a tray lined with parchment paper
  • Be sure to spread them out and add a couple of fresh rosemary sprigs in between
  • Bake on 350Β°F for seven minutes in the oven
  • After they are baked for seven minutes they get smashed, then baked again for 15 minutes on each side
  • I smashed my potatoes by using a bottom of a glass
  • Let the potatoes rest for five minutes before adding the Gremolata
  • In a separate bowl prepare the Gremolata:
  • Add 1 tablespoon of lemon zest, five garlic cloves minced, 1/2 cup of grated Parmesan cheese, add 2 tablespoons of fresh chopped parsley
  • Enjoy!
