Marble Loaf Banana Bread & Toblerone Banana Muffins

You will need: 1/2 cup of unsalted butter, two eggs, 1/2 cup of sour cream or Greek yogurt, 1.5 cups of flour, 2 teaspoons of vanilla, a dash of salt, one 1/4 cup of mashed overripe bananas, 1/4 cup unsweetened cocoa powder, 1 teaspoon of baking soda

Instructions:

  • In the mixers bowl add the butter and the sugar
  • Cream the butter and sugar together until creamy and fluffy
  • Add the eggs and vanilla. Continue mixing until everything is well combined and smooth, then turn off the mixer
  • Now mash the bananas on the plate, then add the mashed bananas to the mixers bowl
  • Mix mashed bananas in with a spatula
  • Now add all the dry ingredients to the mixers bowl
  • Add the flour, then the baking soda, add the salt
  • Mix the dry ingredients in until just combined
  • Next add yogurt or sour cream and mix it in until it is well incorporated into the batter
  • Transfer 1/2 the batter into another bowl and add cocoa powder to it
  • Stir the cocoa powder in, until it is well combined and no dry spots appear
  • Into a greased pan, scoop out and dollop alternating white and chocolate batter
  • Using a butter knife, gently swirl the top
  • Then add a whole Tolberone bar in the middle
  • Dollop more batter on top of the bar and then swirl on the top
  • I also took some of the white batter, scooped it out into muffin tins and topped it with Tobler own pieces
  • Now it is time to place all pans/tins into the oven
  • Bake on 350°F until the cake tester inserted into the center comes out clean
  • Baking time will vary according to the baking pan size. It took about 55 minutes for the two bigger loaves to bake and 15 minutes for the muffins
