Fresh Oregano Cake

You will need: Black and green olives, one cup of yogurt, 1 tablespoon of baking powder, one teaspoon of vinegar or liquid vanilla, 1/2 cup of olive oil, 1 cup fresh oregano, three large eggs, 2 cups flour, oneTeaspoon dried oregano, one cup of shredded mozzarella, 1/2 cup of goat cheese

  • First, In a mixing bowl add the eggs and vanilla or vinegar and then mix
  • add 1/2 cup of olive oil and then mix
  • add roughly chopped fresh oregano and then mix
  • add the cheese and then add your goat cheese
  • add the olives and then mix gently to combine all the ingredients
  • take your dry ingredients: 2 cups of flour, 1 teaspoon dry oregano, 1/2 teaspoon of salt
  • sift dry ingredients into the mixing bowl with the other ingredients
  • fold the dry and wet ingredients together using a spatula
  • lastly, add 1 cup of yogurt
  • combine everything together
  • brush the baking pan with olive oil
  • transfer the cake batter to the pan and even out the surface
  • sprinkle with some sesame seeds and some nigella seeds
  • now your cake is ready to go in your oven
  • Bake on 350°F for about 20 to 25 minutes or until a toothpick in the center comes out clean. Then broil for just a couple more minutes until the top is a light golden brown
