You will need: Pumpkin purée, vegetable oil, brown sugar, cinnamon, ginger powder, nutmeg, cloves, flour, 1 egg, sugar, vanilla, chocolate chips
Instructions:
- In a mixing bowl, add 2 cups of flour
- Add 2 tsps baking powder, 1/2 tsp salt, 3/4 baking soda
- Add Spices: 1 1/2 tsp cinnamon, 1/2 tsp ginger powder, 1/2 tsp nutmeg, 1/4 tsp cloves
- Mix dry ingredients
- To the mixers bowl, add the sugar
- Add brown sugar
- Add 1/2 cup vegetable oil (I used coconut oil)
- Mix sugar and oil
- Scrape the sides of the bowl
- Add the egg
- Add the vanilla
- Add 1 cup of pumpkin purée
- Mix pumpkin in
- Gradually add the dry ingredients while mixing on low speed
- Add the chocolate chips
- Fold the chocolate chips in with a spatula
- When the cookie batter is ready, place it in a bowl and cover it with plastic. Place the bowl in a refrigerator for half an hour
- Using a medium scoop, divide dough into equal size balls and drop them on a parchment paper lined baking sheet
- Gently press on the cookie balls with the back of a spoon to flatten them
- Add more chocolate chips on top if you’d like
- Bake cookies in 350F preheated oven for 11-13 minutes or until cookies are nearly set

Once well combined add 1 large egg, 1 tsp vanilla and mix. Add 1 cup pumpkin purée and mix it in. Start adding the dry ingredients gradually while mixing on low speed. Lastly, add the chocolate chips (amount as desired, I used 1 cup), then fold them in with a spatula. Cover and refrigerate cookie dough for half an hour then divide into equal balls, using a medium scoop; then drop them on a cookie sheet lined with parchment paper.
