Pumpkin Cookies

You will need: Pumpkin purée, vegetable oil, brown sugar, cinnamon, ginger powder, nutmeg, cloves, flour, 1 egg, sugar, vanilla, chocolate chips

Instructions:

  • In a mixing bowl, add 2 cups of flour
  • Add 2 tsps baking powder, 1/2 tsp salt, 3/4 baking soda
  • Add Spices: 1 1/2 tsp cinnamon, 1/2 tsp ginger powder, 1/2 tsp nutmeg, 1/4 tsp cloves
  • Mix dry ingredients
  • To the mixers bowl, add the sugar
  • Add brown sugar
  • Add 1/2 cup vegetable oil (I used coconut oil)
  • Mix sugar and oil
  • Scrape the sides of the bowl
  • Add the egg
  • Add the vanilla
  • Add 1 cup of pumpkin purée
  • Mix pumpkin in
  • Gradually add the dry ingredients while mixing on low speed
  • Add the chocolate chips
  • Fold the chocolate chips in with a spatula
  • When the cookie batter is ready, place it in a bowl and cover it with plastic. Place the bowl in a refrigerator for half an hour
  • Using a medium scoop, divide dough into equal size balls and drop them on a parchment paper lined baking sheet
  • Gently press on the cookie balls with the back of a spoon to flatten them
  • Add more chocolate chips on top if you’d like
  • Bake cookies in 350F preheated oven for 11-13 minutes or until cookies are nearly set
