Olive Bread

You will need: 1/2 teaspoon of salt, fresh herbs, 2 cups of lukewarm water, 3 tablespoons of olive oil, one package of yeast, 1 teaspoon of garlic powder, 1 teaspoon of dried oregano, for 1/3 cup of flour, I used 3 cups regular and 1 1/3 cup whole wheat flour, 1 cup of olives green and black

Instructions:

  • In the mixing bowl add 2 cups of lukewarm water
  • Add a packet of yeast 2 1/4 teaspoon
  • Add 1/2 teaspoon of sugar
  • Stir with a wooden spoon until well combined
  • Cover and set aside for 10 minutes
  • Mix regular white and whole wheat flowers
  • To the yeast mixture, add 1 cup of flour and mix until well combined
  • Add the fresh herbs: fresh oregano, chives, and rosemary
  • Add 1 cup of olives, pitted
  • Add sliced olives
  • Add garlic powder and dried oregano
  • Mix everything until well combined
  • Add the remaining 3 1/3 cups of flour, 1 at a time
  • Mix after each added cup
  • Add 1/2 teaspoon of salt and mix
  • When the dough is ready, cover the bowl and set it aside for one hour
  • After one hour, brush the bottom and sides of a 12 inch skillet with olive oil
  • Transfer the dough to the skillet
  • Put a little olive oil on your hand and smooth the does surface and sides to shape like a disk
  • Cover it with a clean towel and let it rest for 10 minutes
  • You can bake it without any toppings or add veggies on top, are used cherry tomatoes on the vine, red onion and olives slices, and fresh herbs
  • Preheat the oven to 350°F and bake for 30 minutes or until the top is nicely browned
