You will need: Lamb chops, arugula, mozzarella, pesto sauce, cherry tomatoes, black pepper, salt, rosemary, garlic cloves, water
Instructions:
- Prepare the marinade/brine
- A handful of garlic cloves sliced longitudinally
- Some fresh rosemary
- One finally minced onion
- Add 3 teaspoons of salt
- Add 1 teaspoon black pepper
- Add room temperature water to the container and mix well
- Transfer the lamb chops to the container
- For best results let the chops sit in this brine for 24 hours
- Arrange the chops in the container in a way that they’re all submerged in the brine
- Grill your chops to your desired doneness
- Serve it over some fresh arugula
- With some fresh mozzarella, pesto sauce and cherry tomatoes
- Enjoy!

I used the same meat brining technique I’ve shared before, which you’ll find saved in the highlights, but I will share the steps again later on my story. I simply infused some water with fresh minced onion, sliced garlic cloves, fresh rosemary, salt and pepper and brined the lamb chops in this mix for 24 hours. If you give this technique a try, regardless of whether you decide to cook the chops on the grill, in the oven or skillet sear them stovetop, I promise you, you’ll be very happy with the outcome!
