You will need: 3 cups of cherries that are pitted, 3 eggs, 1 cup of milk, 1/2 cup of sugar, 1/2 cup of flour, 2 tablespoons melted and cooled butter, 2 tablespoons vanilla, a pinch of salt
Instructions:
- Grease the baking pan and sprinkle with 2 tablespoons of sugar
- put the cherries, are use a cherry olive pitting gadget that I used, but you can use a chopstick or a wooden skewer to do this
- arrange pitted cherries on the bottom of the pan and set aside until you prepare the batter
- now let’s make the batter
- to the mixers bowl add 3 eggs
- add 1/2 cup of sugar
- add 2 tablespoons of vanilla
- add a dash of salt
- add melted butter 2 tablespoons
- add 1/2 cup of flour
- add the flour to the wet mix
- mix the flour in until well blended and lump free
- add 1 cup of milk and mix until well combined
- when the batter is ready, slowly pour batter over the cherries
- Bake in a 350°F preheated oven until set from sides, fluffed and golden in color. This could take up to 45 minutes, depending on your oven. Mine was ready in 35 minutes.
- once fluffed and golden in color, take it out of the oven and place it on a cooling rack for 15 minutes
- once lukewarm, dust with powdered sugar and you can also add some toasted almond slices on top if available
