Homemade Kahk

You will need: ghee, ground cardamom, sesame seeds, baking dates, yeast, good quality honey, flour, Mahlab, sugar

Instructions:

  • To make the date filling:
  • Melt 1 tbsp of Ghee
  • Add 2 tbsps of sesame seeds
  • Toast the sesame seeds in the hot ghee for just 1 minute
  • Add a whole pack of baking dates
  • Add 1 tsp of ground cardamom
  • Break the date block with the back of a wooden spoon until softened and well combined with the sesame seeds and ghee
  • Transfer it to a plate and let it cool off for a couple of minutes
  • Using a small melon scoop divide the date paste into equal size balls
  • To make the Agameya (honey filling):
  • Melt 2 tablespoons of ghee
  • Add 2 tbsps of flour
  • Mix the flour in
  • When the mix starts to get frothy, add 1 tbsp of sesame seeds
  • Mix sesame seeds into the flour ghee mixture
  • Add 1 cup of good quality honey, mix it in and bring to a boil , stirring constantly
  • Once boiled, cook for 2 more minutes, until thick bubbles start to form and remove from heat
  • Transfer it to a plate, add your favorite nuts in and set it aside to cool off
  • Fillings are ready
  • 1 kilo flour + 1/2 tsp salt + 1 tsp Mahlab
  • Mix the dry ingredients
  • Add 4 tbsps of sesame seeds
  • Melt 1/2 kilo of ghee
  • Heat the ghee until it reaches a bubbling point
  • Carefully pour the hot ghee of the sesame (be sure to use a heat resistant mixing bowl)
  • Using a wooden spoon, very carefully mix hot ghee with flour
  • Until it reaches a wet sandy consistency – set it aside to cool off.
  • In the meantime, prepare the filling and activate the yeast
  • To activate the yeast: dissolve 1 packet instant yeast and 1/2 tbsp sugar into 1/4 lukewarm water
  • Mix them well
  • Cover it and let it rise
  • Yeast is now ready
  • Add yeast to the ghee flour mix and mix them together by hand until well combined
  • Assemble Kahk:
  • Divide the dough into equal portions and roll each portion into a ball
  • Make an indentation and add your stuffing in, roll ball again
  • Use a Ma’amoul mold or any other Kahk gadget to shape your Kahk. (If you don’t have any, you can use the back of a fork to stamp the Kahk)
  • Place a baking sheet on a baking pan, and set them up to go in the oven
  • Bake on 350F for 20-30 minutes until light golden in color
  • Once they are out of the oven, let them completely cool off, then carefully transfer it to your cookie tins ,or air tight containers, until serving time
  • Right before serving, dust with some powdered sugar and enjoy!
