Broccoli Cheddar Soup

You will need: 4 medium carrots (julienned), 1 medium onion diced, 1.5 lb of broccoli, 2 garlic cloves minced

Instructions:

  • Melt 1/2 cup butter or ghee in a pot
  • Add onion
  • Cook the onion until it’s fragrant and translucent (this takes about 5 minutes)
  • Add 2 tbsps of salt
  • Add 1/2 tsp black pepper
  • Optional: add 1/2 tsp of cayenne pepper
  • Add minced garlic
  • Add the carrots and sauté for 5 minutes
  • Add 1/2 cup of flour
  • Stir flour in and cook for 2 minutes
  • Add 4 cups of chicken broth
  • Give it a stir
  • Add broccoli and mix it in
  • Cook until it reaches a soft boil (this takes about 10 minutes)
  • Add 2 cups of milk
  • Add 2 cups of cream
  • Give it a stir
  • When it reaches a soft boil, lower heat and cover
  • Simmer soup for 5 minutes
  • Turn off the heat and add 3 cups of shredded cheddar cheese
  • Mix cheese in and stir until it is completely melted
