You will need: 4 medium carrots (julienned), 1 medium onion diced, 1.5 lb of broccoli, 2 garlic cloves minced
Instructions:
- Melt 1/2 cup butter or ghee in a pot
- Add onion
- Cook the onion until it’s fragrant and translucent (this takes about 5 minutes)
- Add 2 tbsps of salt
- Add 1/2 tsp black pepper
- Optional: add 1/2 tsp of cayenne pepper
- Add minced garlic
- Add the carrots and sauté for 5 minutes
- Add 1/2 cup of flour
- Stir flour in and cook for 2 minutes
- Add 4 cups of chicken broth
- Give it a stir
- Add broccoli and mix it in
- Cook until it reaches a soft boil (this takes about 10 minutes)
- Add 2 cups of milk
- Add 2 cups of cream
- Give it a stir
- When it reaches a soft boil, lower heat and cover
- Simmer soup for 5 minutes
- Turn off the heat and add 3 cups of shredded cheddar cheese
- Mix cheese in and stir until it is completely melted
