Freekeh Veggie Soup

What you will need:

1/2 mug Freekeh, (Freekeh is green durum wheat), ghee (purified butter), 1 large onion, one ripe tomato, salt, black pepper, stock ( I used beef stock), green peas,


  • Wash very well until water runs clear, then soak in hot water for an hour
  • Melt 1 tbsp of ghee in a pot
  • Add 1/2 of a large onion
  • Sauté onion in butter until fragrant and light Golden in color
  • Drain All the water from the Freekeh and add it to the sautéed onion
  • Sauté together for 5 minutes
  • Purée one large ripe tomato
  • Add puréed tomato to Freekeh
  • Mix and add salt
  • Add black pepper
  • Add 6 cups of stock (I used my homemade beef stock)
  • Mix
  • Cover and bring to boil
  • Lower heat to medium and simmer for half an hour
  • Cut up some carrots and add to the soup
  • Cook carrots in soup for about 10 minutes
  • Add 1 cup green peas
  • Cover and simmer soup until veggies are fully cooked
  • Enjoy!
