Almond Soup

What you will need:

1 cup unsalted silvered almonds, 1/2 cups oats, 1 medium onion, fresh thyme, 2 cloves garlic

Instructions:

  • Add 1 tbsp butter to the pot
  • 1 tsp of oil
  • Add chopped onion
  • Sauté until fragrant
  • Add chopped garlic
  • Add 1 cup almond
  • When garlic is fragrant add almonds
  • Add fresh thyme
  • Sauté for 2 minutes, then add 1/2 cup oats
  • Mix and cook for together for 3 minutes
  • Add 4 cups broth (I used my homemade chicken broth)
  • Bring to boil
  • Lower heat, cover and simmer for 20 minutes
  • Purée using a hand blender
  • Add 1/2- 1 cup cream (optional)
  • Taste and adjust salt and pepper
  • Bring soup to a soft boil
  • Enjoy!
