What you will need:
1 cup unsalted silvered almonds, 1/2 cups oats, 1 medium onion, fresh thyme, 2 cloves garlic
Instructions:
- Add 1 tbsp butter to the pot
- 1 tsp of oil
- Add chopped onion
- Sauté until fragrant
- Add chopped garlic
- Add 1 cup almond
- When garlic is fragrant add almonds
- Add fresh thyme
- Sauté for 2 minutes, then add 1/2 cup oats
- Mix and cook for together for 3 minutes
- Add 4 cups broth (I used my homemade chicken broth)
- Bring to boil
- Lower heat, cover and simmer for 20 minutes
- Purée using a hand blender
- Add 1/2- 1 cup cream (optional)
- Taste and adjust salt and pepper
- Bring soup to a soft boil
- Enjoy!
