You will need: Tumeric, Cayenne pepper, ginger paste, cinnamon, tomato purée, 1 tsp minced garlic, 1/2 cup parsley, 1/2 cup cilantro chopped, 1 large onion diced, olive oil, butter, lamb cubes
Instructions:
- In a large soup pot heat 1 tbsp butter and 1 tbsp
- Add 1 pound of small lamb cubes to the pot
- Add the spice to the meat and sauté for 5 minutes
- 1 1/2 tsp black pepper
- 1 1/2 tsp cinnamon
- 1 tsp turmeric
- 1/2 to 1 tsp cayenne pepper
- Sauté for 5 minutes
- Add the chopped onion
- Add 1 tsp minced garlic
- Add 2/3 tsp ginger paste (or 1 tsp ginger powder)
- Add chipped parsley and cilantro
- Sauté for 5 minutes
- Add 8 cups water, cover and let simmer until the meat is fully cooked
- Toast 2/3 cups orzo (or can be sautéed in butter)
- Add the orzo to the soup and simmer for a few minutes until fully cooked
- Add 2 twos dried mint
- Enjoy!
