Lemon Chicken

You will need:

6 Lemons, chicken breasts and thighs, onion powder, garlic powder, black pepper, salt, dried oregano, olive oil, fresh thyme, 3 potatoes, a skillet, 2 garlic cloves,

Instructions:

  • Make sure your chicken is clean and fully defrosted before beginning to cook. I suggest wearing rubber gloves to rub the spices on the chicken
  • 1 tbsp lemon pepper to chicken
  • 1 tbsp onion powder to chicken
  • 1/2 tbsp garlic powder to chicken
  • 1 tbsp black pepper to chicken
  • 2 tbsp of salt to chicken
  • 1 tbsp of dried oregano to chicken
  • Zest and juice of 2 lemons
  • Add zest first to the chicken
  • Add juice of 2 lemons to the chicken
  • Rub the chicken with the seasoning mix
  • Drizzle some olive oil onto the chicken
  • Add some fresh thyme and cover, let it sit an marinade for 2 hours
  • While it marinates, put the skillet in the oven while it preheats
  • Once it is done preheating and marinated, transfer the chicken to the skillet
  • Peel and cut 3 potatoes into wedges
  • Toss the potato wedges in the bowl with the leftover marinade
  • Cut a few garlic cloves into 2 and arrange potatoes, lemon slices and garlic in between the chicken pieces
  • Roast on 350F until chicken is fully cooked and potatoes are fork tender, this takes about 1 hour
  • Enjoy!
