You will need:
2 medium onions chopped, 1 1/2 cup fresh tomato purée, 1 1/2 cup strained tomato, 2 tablespoons of tomato paste, 2 pounds of ground beef, butter, oil, milk, pecorino cheese, mini rigatoni pasta
For the Béchamel:
8 tablespoons of flour, 8 tablespoons of butter, 8 cups of milk,
- Pre heat your oven to 350 degrees Fahrenheit
- In a skillet heat 1 tbsp of butter
- 2 tbsps of oil
- Add chopped onion
- Cook the onion until fragrant and translucent
- Add the ground beef and with the back of a spoon break it up into small pieces
- Mix the meat with the onion and cook until browned
- Add 2 tbsps of tomato paste to the browned beef and mix
- Cook together for 2 minutes
- Add puréed fresh tomato
- Add 1/2 tsp sugar and mix it in
- Cover and let cook for 5 mins
- Add 1 1/2 strained tomatoes to the meat and season with salt and pepper, mix well
- Cover and cook on medium low heat for 10 minutes
- While it cooks, focus on the Béchamel
- Melt a stick of butter in a new pan, once it melts add flour by stirring it in
- Cook by stirring constantly, until the paste starts to bubble a little.
- When it does turn off the heat and add just 1 cup of milk (room temp)
- Stir well and add the remaining milk
- Turn the heat back on, continuing to stir until the sauce starts to thicken
- Adding 1 bouillon cube is optional
- Add a dash of nutmeg
- Add salt to taste
- Take 2 eggs in a separate bowl and beat them, add a dash of black pepper to them
- Add beaten eggs to Béchamel
- Cook while constantly mixing until you reach the desired sauce thickness
- Take 8 tbsps grated pecorino cheese and add it to the Béchamel
- Mix until the cheese melts completely in with the sauce
- Take Mini rigatoni Pasta
- Boil pasta in salted water and cook until it is al denote
- Take a clean baking dish and grease the bottom and sides with butter
- Add some of the Béchamel sauce to the pasta and mix together
- Add half the pasta to the greased baking dish
- Add meat sauce to the baking dish and spread it over the pasta
- Add another layer of pasta
- Pour the remaining Béchamel sauce on top
- Lastly, add shredded mozzarella cheese on top
- Add cherry tomatoes
- Bake in the oven at 350 degrees Fahrenheit for about 35 minutes
