This is a tasty and very easy to make recipe. It literally takes just 20 minutes to make it from start to finish and just a few ingredients are needed.
- 1 pound peeled shrimp
- 3 cloves garlic, minced
- 1 1/2 cup rice – I like to use jasmine rice for this recipe
- 1 cup sweet peas and carrots
- 2 tablespoons coconut oil (or ghee)
- 1 1/2 teaspoon ground turmeric
- 3 teaspoons onion powder
- salt & pepper to taste
- 2 small pieces of Mesteka (Arabic Mastic) if available- this is optional and can be completely left out
For the shrimp:
In a medium pan, heat 1 tablespoon coconut oil over medium- high heat. Add the shrimp and Mesteka and sauté for 3 minutes. Add the fresh garlic, half the onion powder and season with salt & pepper to your taste. Sauté for another 3 minutes or until the shrimp changes in color on both sides and is no longer translucent.
For the rice:
Sit a medium saucepan with tight fitting lid over medium-high heat. Add 1 tablespoon coconut oil or ghee. When melted, add the turmeric, rice and the second half of the onion powder and sauté over medium heat for 2 minutes. Add the peas and carrots, combine with the rice and sauté for 2 more minutes. Add 3 cups boiling hot water, reduce heat to simmer, cover and cook for 10 minutes or until rice is tender. Fluff rice with a fork, taste and adjust salt and pepper to taste. Serve with the shrimp, eat and enjoy 👩🏻🍳👌🏻
