Seafood Corn Chowder

I am back with one of my Sons’ most favorite dishes, Seafood Corn Chowder πŸ¦€πŸ₯£πŸ¦
Crabmeat, baby scallops, shrimp, sweet corn, red potatoes, cooked in my homemade shrimp stock, topped with crispy Turkey bacon, and served with saltine and oyster crackers. Talk about heartiness and coziness! πŸ€©πŸ‘ŒπŸ»

πŸ¦€ 1 lb Large Shrimp
πŸ¦€ 1 lb Baby Scallops
πŸ¦€ 1 lb Crab Meat
πŸ¦€ 1/2 lb Red Baby Potatoes 
πŸ¦€ 1 Can Corn
πŸ¦€ 1 Onion
πŸ¦€ 3 Garlic Cloves
πŸ¦€ 7 Cups Shrimp Stock
πŸ¦€ 1 Cup Cream or Half & Half 
πŸ¦€ 4 Tablespoons Butter
πŸ¦€ 2 Tablespoons Oil
πŸ¦€ 4-5 Tablespoons Flour
πŸ¦€ Crispy Turkey Bacon for topping 

Seasonings:
(Amounts can be adjusted according to taste)
πŸ₯„ 1 tablespoon onion powder 
πŸ₯„ 1 tablespoon garlic powder
πŸ₯„ 1 teaspoon paprika 
πŸ₯„ 1 teaspoon seafood seasoning 
πŸ₯„ 1 teaspoon SazΓ³n seasoning 
πŸ₯„ Salt & Pepper to taste


First, I prepare the shrimp stock:
♨️ In a medium pot, combine shrimp shells, a small chopped onion, 2 minced cloves of garlic, a bay leaf, a celery stick, a carrot, salt and pepper to taste, and one teaspoon of seafood seasoning mix. Cover with water, bring to a rolling boil, then reduce heat, cover pot and simmer for 30 minutes. 
♨️ Strain the stock through a fine sieve, pressing on the shells to remove as much stock and flavor as possible.

πŸ₯“ Next, I crisp the bacon. I like to do this in the toaster oven, instead of in a skillet stovetop. This way it is less messy and doesn’t make the entire house smoke and smell like bacon, especially that I am not a big fan of bacon to begin with! 
πŸ₯“ Arrange the bacon slices on a baking sheet lined by parchment paper and bake on 420F for about 10 minutes on each side, or until it’s evenly crisped.

Now let’s make the chowder:
πŸ¦€ In a large pot, add chopped onion to the heated butter and oil; cook until translucent and fragrant. Add the potatoes and cook them for 10-15 minutes, until they start to soften. 
πŸ¦€ Add the shrimp, scallops, garlic, and all the @badiaspicesseasonings, then add the flour and give everything a good mix and cook for just 2 minutes.
πŸ¦€ Add the shrimp stock and continue to mix until it starts to boil. Cover the pot, lower heat, and bring the chowder to a soft boil.
πŸ¦€ Add the crab meat, half and half or cream, corn, and adjust the seasonings to your liking.
