Potato Leek Soup

Kicking off the 2023 Ramadan recipes with this creamy and decadent potato leek soup, which only requires a handful of ingredients and comes together in less than half an hour. It is my favorite soup to make these days, since leeks are in season and the weather is still crispy and on the cooler side!

These are the ingredients you’ll need to make this silky smooth and very tasty Potato Leek Soup:

šŸµ 4 Large Leeks
šŸµ 4 Small Yokun Potatoes 
šŸµ 2 scallions
šŸµ Fresh Chives Bunch
šŸµ 6 Cups Chicken Broth
šŸµ 2 Tablespoons Butter
šŸµ 1 Tablespoon Olive Oil
šŸµ 1/3 Cup Light Cream (optional)
šŸµ Salt & Pepper to taste


Make Potato Leek Soup with me! šŸµšŸ‘ŒšŸ»

šŸµ Over medium heat, sautĆ© the chopped leek and garlic in heated oil and butter, stirring regularly until soft and wilted.
šŸµ Add diced potatoes, sliced scallions, and half the chives, chicken bouillon cubes, and sautĆ© for a few more minutes.
šŸµ Add broth, salt and pepper and bring to a boil. Cover and turn the heat down to low. Simmer for 30 minutes or until the potatoes are soft.
šŸµ Add the remaining chives And purĆ©e the soup with a hand-blender until smooth. Add the cream and bring to a simmer until you reach the desired thickness.
Serve and garnish with chopped chives.
