Let’s get our ingredients ready to make a delicious Clam Pasta dinner 🦪🍽
🍝 Little neck clams, thoroughly washed
🍝 1 package pasta
🍝 2 tablespoons butter
🍝 3 tablespoons olive oil
🍝 5 garlic cloves, chopped
🍝 1 shallot, finely diced
🍝 A handful of cherry tomatoes, halved
🍝 A handful of parsley, chopped, (keep the stems)
🍝 A dash of hot pepper flakes, optional
🍝 Salt & Pepper to taste
🍝 Grated Parmesan or Pecorino cheese
🍝 2/3 cup chicken broth
🍝 A cup of the pasta boiling water

Make Clam Pasta with me! Let’s Go!
🍝 Add 5 tablespoons of coarse salt to a bowl of water and soak the clams in it for half an hour. Repeat this process twice, then wash the clams thoroughly three to four times to get rid of all of the sand.
🍝 Bring a pot of salted water to a boil and cook the pasta according to package instructions.
🍝 In a deep pan, heat some olive oil. Add chopped shallot, minced garlic, parsley stems, red chili flakes, cherry tomatoes, and cook over medium-low heat for about two minutes, making sure to mix around so it doesn’t burn.
🍝 Drain the clams and add them to the pan. Add chicken broth and give it a good stir. Cover the pan and cook for about eight minutes, making sure to stir a few times in between. Once the clams open up, transfer them to a bowl.
🍝 Add a cup of the pasta boiling water to the pan, add al-dente cooked pasta, a cube of butter and stir until melted. Add grated cheese, chopped parsley and transfer clams back to the pan. Adjust salt and black pepper to your taste, serve and enjoy!
