Make Meatballs Parm Subs with me!
🧆 First make the meatballs:
Soak bread crumbs in milk for 20 minutes
In a skillet, heat olive oil over medium heat. Stir diced onions in and cook until translucent (about 15 minutes)
In a large bowl, mix ground meat, sautéed onion, pesto sauce, bread crumb milk mixture, eggs, parsley, garlic, cheese and all the seasonings, until well combined. Cover and refrigerate for one hour.
Using wet hands or a melon scoop dipped in water, form meat mixture into equal size balls.
🥫 Next step, sear meatballs on all sides in heated olive oil, then add hot marinara sauce, cover, bring the flame down to medium-low, and simmer for 10-15 minutes.
🥖 To assemble the sandwiches:
Slice bread open, spray each the inside of each half with olive oil, sprinkle some grated Parmesan cheese and Italian seasonings on top and bake until lightly toasted.
Spread a layer of pesto and a layer of marinara sauce on the bread. Add the meatballs, top with grated mozzarella cheese, and bake again until the cheese is melted.
Bon Appétit ♥️
