Meatball Parm Subs for the win! π§π§π₯«π₯
My meatballs recipe was one of the very first recipes I published on my blog. Iβve made a few minor adjustments to my original recipe so try it out and let me know what you think!
Letβs gather our ingredients to me the most delicious Meatballs Parm Subsπ§π§π₯«π₯
For the Meatballs, youβll need:
π§ 2 pounds ground meat
π§ 2 eggs
π§ 1 onion, diced
π§ 1/3 cup bread crumbs
π§ 1/2 cup milk
π§ 2 tablespoons olive oil
π§ 3 cloves garlic, minced
π§ 1/2 bunch fresh parsley, chopped
π§ 2 tablespoons grated Parmesan or Pecorino Romano cheese
π§ 1 tablespoon Pesto Sauce (optional)
π§ 1/2 teaspoon red pepper flakes
π§ 2 teaspoons salt
π§ 1 teaspoon black pepper
π§ 1 teaspoon dried oregano
π₯« Good quality Marinara Sauce
π₯ Italian bread or Baguette
πΏPesto Sauce
π§ Grated mozzarella & Parmesan cheeses

π§ First make the meatballs:
Soak bread crumbs in milk for 20 minutes
In a skillet, heat olive oil over medium heat. Stir diced onions in and cook until translucent (about 15 minutes)
In a large bowl, mix ground meat, sautΓ©ed onion, pesto sauce, bread crumb milk mixture, eggs, parsley, garlic, cheese and all the seasonings, until well combined. Cover and refrigerate for one hour.
Using wet hands or a melon scoop dipped in water, form meat mixture into equal size balls.
π₯« Next step, sear meatballs on all sides in heated olive oil, then add hot marinara sauce, cover, bring the flame down to medium-low, and simmer for 10-15 minutes.

π₯ To assemble the sandwiches:
Slice bread open, spray each the inside of each half with olive oil, sprinkle some grated Parmesan cheese and Italian seasonings on top and bake until lightly toasted.
Spread a layer of pesto and a layer of marinara sauce on the bread. Add the meatballs, top with grated mozzarella cheese, and bake again until the cheese is melted.
