Growing up, I was the only kid in my family who loved all veggies without an exception and I even love them more now as an adult.
Let’s talk about delicious ways reinvent Brussels Sprouts; simply try to trade boiling or roasting your Brussels Sprouts with this fresh crispy and very flavorful salad.
These are the ingredients I used and the quantities are really up to you! Measure with your hearty 🤩💖
For the Salad:
🥗 A layer of baby arugula
🥗 A layer of shaved Brussels Sprouts
🥗 A layer of thinly sliced celery hearts and leaves
🥗 A few fresh raspberries or chopped apple or pear
🥗 crumbled gorgonzola or blue cheese
🥗 Sliced almond
🥗 Dried cranberries
For the Dressing:
🫙 1 teaspoon finely minced garlic
🫙 1 teaspoon honey
🫙 1 tablespoon Dijon mustard
🫙 1 tablespoon plain yogurt
🫙 1/4 cup lemon juice
🫙 1/4 cup orange juice
🫙 1/2 cup olive oil
🫙 Salt to taste

🥗 Layer all the veggies and toppings in a bowl
🥗 Add all the dressing ingredients to a jar and shake very well
🥗 Pour dressing over salad, serve, and enjoy!
