Let’s make Chicken Avocado Soup 🍵🥄🥑🤩💚
🥑 3 tablespoons avocado oil
🥑 3 cup chopped green onions (green & white parts)
🥑 4 garlic cloves , chopped
🥑 1 jalapeño pepper, seeded and chopped
🥑 3 roasted poblano peppers, seeded and chopped
🥑 3 plum tomatoes
🥑 3 ripe avocados
🥑 1 small onion or shallot
🥑 handful of chopped fresh cilantro
🥑 6 cups chicken broth
🥑 2 cups cooked, shredded chicken
🥑 Juice of 2 limes
🥑 salt and pepper to taste
🥑 1 teaspoon cumin
🍵 sliced radishes, diced avocados, chopped chives, sliced jalapeño, fried onion; and don’t forget an extra squeeze of lime juice!
🥑 First start by drizzling the poblano peppers with olive oil; then roast, peel, deseed, and cut them into small pieces.
🥑 In a stock pot, add avocado oil, shallot, scallions, garlic and jalapeno, sauté until they’re soft and fragrant.
🥑 Add chicken broth, diced tomato, cooked chicken, season with salt and cumin; and let it simmer for about 20 minutes.
🥑 In the food processor, blend avocado, cilantro, roasted poblano pepper, and lime juice, until all is well blended and smooth.
🥑 Stir this avocado mixture into the soup and bring it to a light boil. Add your favorite toppings, serve and enjoy!
