This healthy dip tastes delicious on pretty much everything, especially with grilled chicken, salmon, or simply dig in with lightly salted pita chips; and itβs so so so easy to makeππ» I made mine with fat free Greek yogurt and served it with Chicken Souvlaki and salad. DELICIOUS!! π€©
To make this easy, healthy and delicious Tzatziki dip, you will need:
π¬π· 2 cups Greek yogurt
π¬π· 2 peeled Persian cucumbers, seeds removed
π¬π· 3-5 minced garlic cloves
π¬π· Juice of half a lemon
π¬π· A handful of fresh dill
π¬π· 1/2 teaspoon dried mint (optional)
π¬π· Olives, olive oil, fresh thyme and more dill, for garnish

π₯ Start by peeling and grating the cucumber. You need to get rid of as much of its water as possible, so that your Tzatzikiβs consistency stays thick and doesnβt turn watery. So what I like to do is transfer the grated cucumber onto a fine strainer, sprinkle it with some salt and set it aside, over a deep bowl, letting it drip all its water for about 15-20 minutes; then I squeeze it against the strainer with the back of a spoon, to make sure itβs as dry as possible.
π₯ In a mixing bowl, add the yogurt, grated cucumber, minced garlic, chopped dill, and freshly squeezed lemon juice. Add salt to taste and mix until well combined.
π₯ Transfer dip to your serving plate, drizzle a little olive oil on top and garnish with black and green olives, more dill, and fresh thyme.
