Sharing some of the delicious dishes I made for New Year’s Eve. I’ll start with the German Herring Salad (Roter Heringssalat) – I bought all the ingredients from a German Deli so that the taste can be as authentic as possible.
For the salad:
🍧 1/2 pound pickled herring fillets, drained and diced small
🍧 1 large Granny Smith apple, cored and diced to small cubes
🍧 1/3 pound cooked red beets , diced
🍧 1 medium red onion , diced
🍧 4 German pickles , diced
For the Creamy Dressing:
🍧 3 tablespoons pickle juice from the German pickles
🍧 1 tablespoon oil
🍧 1 tablespoon vinegar
🍧 1 teaspoon sea salt
🍧 1/2 teaspoon sugar
🍧 1 teaspoon yellow mustard
🍧 1 cup sour cream
🍧 1/4 cup heavy whipping cream
🍧 3 tablespoons mayonnaise
🍧 2 tablespoons fresh chopped dill

In a small bowl, whisk together pickle juice, mustard, oil, vinegar, salt and sugar until emulsified. Stir in the whipping cream, sour cream, mayonnaise, and dill.
Place the diced herring, apples, beets, onions, and pickles in a large bowl.
Pour the dressing over the herring mixture and carefully stir until thoroughly combined. Add salt and pepper to taste. If the salad is thicker than you prefer, add a little whipping cream. If you prefer the dressing thicker, add more sour cream and/or mayonnaise.
