Molokhia (Jute Leaf Stew)

Please meet one of the most loved National dishes of Egypt, the ultimate Egyptian comfort food choice, the very nutritious and tasty Molokhia (Jute Leaf Stew). This is a traditional Egyptian soup that was typically eaten by royalty in Ancient Egypt and eventually became a very common food across the Middle East 🌿

Follow this Molokhia recipe for a real treat:
🌿 Defrost 1 package of frozen Molokhia and transfer it to a medium saucepan – I can only find frozen Molokhia at the Middle Eastern stores here in NJ, so making this recipe with fresh Molokhia isn’t an option for me.
🌿 To the thawed Molokhia add 1 bouillon cube, 1 tablespoon ghee (سمنة), and 1/2 teaspoon sugar. Whisk everything together until the ghee has melted and the bouillon cube has dissolved.
🌿 When Molokhia starts to bubble, add 4 ladles of boiling hot stock and whisk until they’re well combined.
🌿Prepare the garlic “Tashaa”: Sauté 1 tablespoon minced garlic in 1 tablespoon ghee until fragrant. Add 1 teaspoon coriander powder and keep mixing until coriander is toasty and fragrant.
🌿 Pour the sizzling garlic coriander mix over the Molokhia, stir it in and bring Molokhia to a soft boil.
Serve it with white rice or hot pita bread and Enjoy!
