Perfect for lunch or dinner, as an appetizer or entrΓ©e, with meat or meatless. I’m sharing my recipe with you and you can play with ingredients and change it up to make it your own!

πŸ₯’ Slice 5 medium zucchinis lengthwise and arrange them in one layer on a baking tray lined with oiled parchment paper. 
πŸ₯’ Season them with a dash salt and pepper and brush them with olive oil.
πŸ₯’ Bake the zucchini slices in a 400F preheated oven until they soften; about 10 minutes.
πŸ₯’ While the Zucchini is in the oven, prepare the filling by mixing 1 cup ricotta cheese, 2 small eggs, 1/2 cup grated Parmesan or Romano cheese, 1 tablespoon fresh or dried parsley and a few chopped basil leaves. Season this mix with a dash of black pepper.
πŸ₯’ Once the zucchini is out of the oven and cooled, gently pat it with paper towel to remove the excess moisture.
πŸ₯’Add a teaspoon of the filling on the wider end of each slice and gently roll it.
πŸ₯’ Spread a thin layer of marinara sauce on the bottom of your baking dish, arrange the Zucchini Rolls, and top each roll with a little marinara sauce.
πŸ₯’ Lastly, top the rolls with shredded mozzarella and more grated Parmesan or Romano cheese.
πŸ₯’ Bake on 400F, until the cheese melts and the sauce gets bubbly.
