I love cheese and I love zucchini, so what’s for lunch?? Zucchini Rollatini!!
One word, DELICIOUS!! Oh, and by the way, it’s low carb too, in case you count your calories! 😁😉
Perfect for lunch or dinner, as an appetizer or entrée, with meat or meatless. I’m sharing my recipe with you and you can play with ingredients and change it up to make it your own!
🥒 Slice 5 medium zucchinis lengthwise and arrange them in one layer on a baking tray lined with oiled parchment paper.
🥒 Season them with a dash salt and pepper and brush them with olive oil.
🥒 Bake the zucchini slices in a 400F preheated oven until they soften; about 10 minutes.
🥒 While the Zucchini is in the oven, prepare the filling by mixing 1 cup ricotta cheese, 2 small eggs, 1/2 cup grated Parmesan or Romano cheese, 1 tablespoon fresh or dried parsley and a few chopped basil leaves. Season this mix with a dash of black pepper.
🥒 Once the zucchini is out of the oven and cooled, gently pat it with paper towel to remove the excess moisture.
🥒Add a teaspoon of the filling on the wider end of each slice and gently roll it.
🥒 Spread a thin layer of marinara sauce on the bottom of your baking dish, arrange the Zucchini Rolls, and top each roll with a little marinara sauce.
🥒 Lastly, top the rolls with shredded mozzarella and more grated Parmesan or Romano cheese.
🥒 Bake on 400F, until the cheese melts and the sauce gets bubbly.
