Ramadan Atayef from A to Z

Guess what?? 🤩 It’s Atayef (Qatayef or Katayef) Time!! Those delicious thin lacey stuffed Middle Eastern pancakes are one of the most popular and loved Ramadan treats; and a staple in our household during this very special month ☪️💐
Whether you like your Atayef savory or sweet, stuffed, fully sealed and fried, baked, or Asafiri style, I got you covered!
If you’ve been driving for miles to the Middle Eastern stores just to get fresh Atayef, I will save you the trip and show you how you can make it at home like a Pro. Believe me, it is much easier than you think and I promise you, you’ll be delighted with the results 👌🏻Make sure you save my Sugar Syrup recipe and enjoy the full “Atayef from A to Z” Series!

Atayef Recipe Part 1️⃣Making the Batter 🥞
INGREDIENTS:🍥 3 cups flour🍥 1/2 cup semolina🍥 2 tablespoons sugar🍥 1 teaspoon yeast 🍥 1/2 teaspoon salt🍥 1/2 teaspoon baking soda 🍥 3 cups lukewarm water 🍥 1 cup lukewarm milk🍥1 teaspoon vanilla🍥
Optional- 1/2 teaspoon Mahlab powder

DIRECTIONS:
🍥In a mixing bowl, sift flour, semolina, yeast, sugar and salt, and set aside.
🍥Combine lukewarm water and milk in the blender; add only half of the dry ingredients and blend until well combined.
🍥Add the second half of the dry ingredients and mix again until well combined. Add the vanilla and give it a quick blend.
🍥 Lastly, add the baking soda and blend the batter for 3 minutes. Transfer the batter to a bowl, cover it with a plate and let it rest for 1/2 an hour.And Voila! The Atayef batter is now ready.

Atayef Recipe Part 2️⃣🥞 Cooking the Batter:
🍥 Heat a non stick pan or griddle to medium- high heat; no need to use any cooking spray, butter or oil. If your cooking surface is preheated properly, the Atayef will not stick to it and the cooking process will be smooth.
🍥 Pour the batter into equal size circles. You can use a measuring 1/3 cup, a ladle or a batter cup with a pour sprout.
🍥 Once the Atayef starts bubbling, drop the temperature to medium so it doesn’t burn.
🍥 When the center of each Atayef dries and isn’t shiny, that means that they’re done. They each should take about 1-2 minutes to cook depending on their size.
🍥 Remove Atayef from the pan and transfer it immediately to a tea towel, Making sure that you fold down the towel to cover the pancakes, otherwise they will dry out really quickly. That can result into Atayef that are difficult to fold and seal when you want to fill them.
🍥 Atayef will become softer once they cool down, making them easy to fold and seal while you stuff them. If you don’t want to fill them right away, you can store them in an airtight container or a plastic bag to avoid drying. For best results I highly recommend that you stuff them on the same day.

Atayef Recipe Part 3️⃣Atayef Savory & Sweet Fillings:
🧀🫒Savory Atayef 🫒🧀 A staple on our Iftar table every night and my boys’ most favorite of all Ramadan dishes; they absolutely love Atayef! It makes a perfect side for our Soup du Jour. 
I make two savory filling varieties and both are equally delicious:
🧀 Basterma, shredded Roumy and mozzarella cheese mix
🌿 Creamy Feta cheese, parsley, dried mint and nigella seeds mix
Once the Atayef is stuffed you can fry it in oil, or brush it with ghee and bake it in the oven on 350 for 4 minutes on each side or until golden in color; or you can freeze it to cook it later.
*To freeze the stuffed Atayef, place them in one layer on a tray lined with parchment paper, making sure they’re not touching or overlapping. Cover them with plastic wrap. Once frozen, transfer them into a ziplock bag or air tight container and store them in the freezer for up to a week.

🥮 Sweet Atayef 🥮 Crunchy from the outside, stuffed with a variety of delicious fillings, fried in oil (or baked), then dipped in or drizzled with homemade syrup; DELICIOUS 🤩🌟
I make three filling varieties for my sweet Atayef:
🍥 The old fashioned classic filling is my all time favorite; roughly chopped toasted hazelnuts or walnuts, raisins, dried cranberries, fine shredded coconut and a touch of cinnamon
🍥 Whipped cream cheese, coconut and sugar
🍥 Chopped dates, pecans and cinnamon
