Chocolate Chip Fudge Cake

Last weekend was a busy one for my family. We celebrated my niece’s wedding, my sister in law’s and my son Kareem’s birthdays 🥳🎈🎉🎁
Kareem is a chocolate, mint, coffee and brownie lover, so I combined them all in his birthday cake and it turned out amazing!

You will need:

🎂 For Cake Batter:
Wet Ingredients: 
1 cup sugar, 3/4 cup oil, 1/2 cup buttermilk, 1 tsp vanilla, 1/2 tsp peppermint extract (optional)
Whisk all the wet ingredients together until they’re well combined.
Dry Ingredients:
2 cups flour, 1/2 cup cocoa powder, 1 tsp baking powder, 1/8 tsp baking soda, 1 tsp Turkish coffee or espresso powder (optional), 1/4 tsp salt

🍫Mix the dry ingredients together and sift them into the wet ingredients.
🍫 Mix wet and dry ingredients with a spatula and when well incorporated, add 1/4 cup warm water and mix it in the batter. Fold 1/2 cup mint chocolate chips in.
🍫 Transfer the batter to a 9 inch greased pan and bake it in a 350 preheated oven until a toothpick inserted in the center comes out clean; about 40 – 45 minutes. 
Take the cake out of the oven and flip it out of the pan onto a cooling rack and set it aside until it cools completely.

🎂 For the Chocolate Whipped Cream Filling and Frosting, you’ll need:
2 cups cold whipping cream, 1 cup powdered sugar, 1/2 cup cocoa powder

🍫 Add the 3 ingredients into the mixer’s bowl and whisk on low speed until they’re combined. Increase the mixer’s speed to medium-high and continue mixing until hard peaks form and the whipped cream holds its shape; about 5-7 minutes

🎂Slice the cake in half and drizzle each half with milk or coffee; I used home brewed French vanilla coffee.
Spread a 1/3 of chocolate whipped cream in between the two cake halves. Spread the other 2/3 to cover the top and sides of the cake.
Garnish as you wish. I topped it with chocolate sprinkles and a touch of gold dust!

And voila!! Made for my Son’s birthday with lots and lots of love! 👩‍👦❤️
