Baba Ghanoush

Love Mediterranean appetizers and mezzas and looking for easy, tried and true recipes?? Look no further! You can make a delicious bowl of Baba Ghanoush with just a couple ingredients. Give it a try and I promise you, you’ll absolutely love it!! πŸ†β€οΈ

You will need:
1 medium eggplant, 3 tablespoons lemon juice, 1/8 cup Tahini, 2 minced garlic cloves, salt & pepper to taste, fresh parsley, 1 tablespoon olive oil, 1 chopped tomato, 1/8 cup pomegranate seeds, 1/8 cup toasted pine nuts

Let’s get started:
πŸ† eggplant, roasted, peeled and mashed.
πŸ† In a bowl, mix the mashed eggplant with Tahini, yogurt, lemon juice, minced garlic cloves, a handful of chopped parsley, salt and pepper to taste and olive oil. Mix well until all is well combined.
πŸ† Transfer the Baba Ghanoush to a serving bowl, drizzled with olive oil and garnish with chopped parsley, diced tomatoes, pomegranate seeds and pine nuts.
