Mushroom Soup

You will need: salt, Baby Bella Mushrooms, balsamic vinegar, flour, garlic, 1 onion, butter, olive oil

Instructions:

  • In a medium pot heat 3 tablespoons of butter and add one tablespoon of olive oil
  • Add a chopped medium onion
  • Sauté onion until its fragrant and translucent
  • Now add one pound of sliced mushrooms. I like to use baby Bella, but any other kind will work
  • Mix mushrooms with onions and cook until mushrooms start to soften
  • Add 2 minced garlic cloves
  • Cook for 2 minutes, until garlic is fragrant
  • Then add 2 tablespoons flour
  • Mix flour in
  • Stir and cook until you no longer see white flour spots
  • Deglaze with 1 tablespoon of balsamic vinegar
  • Add a few sprigs of fresh thyme
  • Add 4 cups of room temperature chicken or beef broth
  • Give it a good stir
  • Add salt
  • Bring soup to a light boil
  • Soup is now ready! If you like it with cream, add some to your liking
  • Enjoy!
