You will need: salt, Baby Bella Mushrooms, balsamic vinegar, flour, garlic, 1 onion, butter, olive oil
Instructions:
- In a medium pot heat 3 tablespoons of butter and add one tablespoon of olive oil
- Add a chopped medium onion
- Sauté onion until its fragrant and translucent
- Now add one pound of sliced mushrooms. I like to use baby Bella, but any other kind will work
- Mix mushrooms with onions and cook until mushrooms start to soften
- Add 2 minced garlic cloves
- Cook for 2 minutes, until garlic is fragrant
- Then add 2 tablespoons flour
- Mix flour in
- Stir and cook until you no longer see white flour spots
- Deglaze with 1 tablespoon of balsamic vinegar
- Add a few sprigs of fresh thyme
- Add 4 cups of room temperature chicken or beef broth
- Give it a good stir
- Add salt
- Bring soup to a light boil
- Soup is now ready! If you like it with cream, add some to your liking
