You will need: butter, olive oil, 2.5 lbs of ground beef, 1 large onion, garlic, chili powder, cumin, salt, black pepper, one 14 oz can of fire roasted diced tomatoes, 1 large red pepper, 2 jalapeño peppers, tomato sauce, tomato paste, sugar, red beans, corn, pomegranate or apple vinegar, sour cream, avocado, cheddar cheese
Instructions:
- In a pot, heat 2 tablespoons of butter and 2 tablespoons of olive oil
- Add a large diced onion and cook it in the oil butter mix until it’s translucent
- Add 5 minced garlic cloves and cook until fragrant
- Next add 2.5 pounds of ground beef, make sure to break up the ground beef pieces with a wooden spoon
- Stir it in with the onion and garlic and cook until it is browned
- Now add the spices: add 3 tablespoons of chili powder, 1 tablespoon of cumin, salt and black pepper, to taste
- Give the meat a good stir with the spices
- Add 1 teaspoon of smoked paprika (if not available use regular paprika instead)
- Add 1/2 teaspoon of nutmeg and mix it in
- Add 1 large red pepper and 2 jalapeño peppers diced
- Mix peppers in with the meat and cook for three minutes
- Next add a 14 ounce can of fire roasted diced tomatoes and mix it into the pot
- Add 1 cup of tomato sauce and mix
- Add 1 tablespoon of tomato paste
- Add 1 teaspoon of sugar
- Stir the tomato paste and sugar in
- Then put the lid on and let the chili simmer for 10 minutes
- After 10 minutes add one mug cooked red beans
- Add a tablespoon of pomegranate or apple vinegar
- Add one mug of cooked corn
- Add 1/2 cup of hot water and cook the chili for 10 more minutes
- Garnish your chili with sour cream, shredded cheddar cheese, avocado and jalapeño slices
