Beef Barley Soup

You will need: 1.5 pounds of small beef cubes, cardamom pods, Mesteka, black pepper, celery, 1 onion, pearl barley, bullion cubes, cinnamon, butter, zucchini, beef bouillon cubes,

Instructions:

  • To a stock pot add:
  • 1.5 pounds of small beef cubes
  • A few cardamom pods
  • Add enough water to fill half the pot
  • Bring to a boil
  • Then add one finally chopped onion
  • A few pieces of Mesteka, about half a teaspoon
  • Give it a good stir
  • Add a cup of chopped celery
  • Add 2/3 cup of strained tomatoes or tomato sauce
  • Add 1/2 a teaspoon of black pepper
  • Bring this mix to a light boil, then add 1 cup of sliced carrots
  • Add to beef bullion cubes
  • Add 2/3 cup of pearl barley
  • Add 2 tablespoons of butter
  • Add 1/2 teaspoon of cinnamon and give it a stir so the barley doesn’t stick to the bottom of the pot
  • Put the lid on, lower heat and simmer soup for 20 minutes stirring occasionally
  • Scoop the cardamom pods out
  • Add 1 tablespoon of tomato paste to the pot and stir it in
  • Now add 1 cup of diced zucchini
  • Optional: I had a bag of diced butternut squash in my freezer so I added one cup to the soup
  • Stir it in, simmer soup for 5 more minutes then serve and enjoy!
  • Adjust salt to your taste.
