Lentil Soup II

You will need: 1 mug of lentils, 1 medium potato, 3 cloves of garlic, 1 medium onion, 3 small carrots, 2 small tomatoes, bouillon cubes, Mesteka, salt, black pepper, cumin


  • In a pot, heat 3 tablespoons of olive oil and add chopped onion
  • Add cut up carrots
  • Add cut up potato
  • Add cut up tomatoes
  • Add lentils
  • Add 2 bouillon cubes
  • Mix and sauté everything together for a couple of minutes
  • Add hot water, about 6 cups
  • Stir and bring to a boil
  • Lower the heat, cover and let simmer for about 30 minutes, stirring occasionally so lentils don’t stick to the bottom of the pot, until all potatoes and carrots are fork tender and lentils are cooked
  • Purée the soup
  • Season with salt, black pepper, and 1 teaspoon of cumin
  • In a sauce pan melt 2 tablespoons of butter and add Mesteka
  • Heat until the Mesteka has dissolved in the hot butter mixture gets bubbly
  • Add to the soup
  • Dilute soup with hot water if needed
  • Enjoy!
