Kofta Kebab

What you will need: Cumin, paprika, red chili powder, salt, black pepper, 2 medium onions, 1/2 a red bell pepper, 10 fresh mint leaves, 1/2 a bunch of parsley, 3.5 lbs of 80% lean ground beef

Instructions:

  • The seasonings are: 1 1/2 tsp cumin, 1 1/2 tsp paprika, 1 tsp red chili, 3 tsps salt, 1 1/2 coriander, 1 1/2 tsp black pepper,
  • 2 medium onions, 1/2 a red bell pepper, 10 fresh mint leaves, 1/2 a bunch of parsley
  • Dice the red pepper
  • Chop the onion
  • Chop parsley
  • Chop the mint leaves
  • Mix all of the chopped veggies into a bowl
  • Mix all the seasonings together
  • Mince garlic
  • In the food processor add: half of the meat: half the veggies and 1 tsp minced garlic
  • Add 1/2 of the spices
  • Pulse everything together until well combined
  • Transfer to a bowl and repeat the same with the second half of the meat
  • Kofta mix is now ready
  • Divide the Kofta mix into equal size portions. Dip your hand in water and take a portion and thread on a skewer, making sure to press it so it adheres to the skewer, or shape them into patties.
  • You can also store a portion of the Kofta mix in an airtight container in the freezer to have it handy for another meal
  • Cook the kofta skewers and patties on a preheated grill for just a few minutes on each side. Do not over cook it so it stays tender and juicy
  • Serve with pita bread, Tahini sauce, and sumac seasoned onion slices
  • Enjoy!
