You will need: Garlic, baby potatoes or full (your choice), olive oil, onion powder, black pepper, fresh rosemary, fresh thyme, cherry tomatoes, dried oregano, cayenne pepper (optional)
Instructions:
- Cut the potatoes in half using baby potatoes or in cubes if using regular ones
- Season potatoes with:
- 1 tsp of garlic
- 1 tsp onion powder, 1/2- 1 tsp dried oregano,
- Optional: 1/2 tsp cayenne pepper (if you like it spicy)
- A handful of whole garlic cloves
- Fresh herbs, I used thyme, but you can use rosemary, or both
- 1/2 tsp of black pepper
- Add a generous amount of good quality olive oil ( I used my herb infused one)
- Toss everything together to make sure the potatoes are coated all around with the oil and seasonings
- Take 2 small garlic heads, peel away the loose papery outer layer and leave the head itself intact with all the cloves connected
- Trim the top of the garlic heads and place them in between the the potato halves season with salt to taste
- Drizzle more olive oil on top
- Preheat oven to 350 degrees Fahrenheit and cook covered for 20 minutes
- Remove cover, and add cherry tomatoes, more fresh thyme or rosemary, toss everything together and put them back in the oven, uncovered until they are fork tender
- Voila!
