Lentil Soup

You will need:

1 mug of lentils, 1 medium potato, 2 bouillon cubes, 1 medium onion, 3 cloves garlic, 3 small carrots, 2 small tomatoes, high quality extra virgin olive oil ( I use Mina), Greek Mesteka (Greek Mastic), 1 tbsp of cumin

Instructions:

  • Heat some good quality olive oil
  • Add chopped onion
  • Add cut up carrots
  • Add cut up potato
  • Add lentils
  • Mix and sauté everything together for a couple minutes
  • Add 2 bouillon cubes
  • Add hot water, about 6 cups
  • Stir and bring it to a boil
  • Lower the heat, cover and let it simmer for about 30 minutes
  • Stirring occasionally so lentils don’t stick to the bottom of the pot, until all potatoes and carrots are fork tender and lentils are cooked
  • Purée soup
  • Season with salt
  • Black pepper
  • 1 table spoon of cumin
  • In a separate saucepan, melt 2 tbsps of butter and add Greek Mesteka (Greek Mastic)
  • Wait until the mesteka has dissolved in the hot butter and the mixture becomes bubbly
  • Once it does, add it to the soup
  • Mix until well combined and soup is heated through, you can dilute the soup with hot water if needed.
