Eggplant Caprese Stacks

Ingredients:
πŸ† 3 medium Italian or Graffiti Eggplants
🌢️ Sliced roasted red pepper
πŸ§€ Sliced fresh mozzarella 
πŸ… 2 pints of grape tomatoes 
πŸ§„ 5-6 garlic cloves
🌿 A handful of fresh basil leaves & a couple of sprigs of thyme
πŸ§‚ Salt to taste
🍾 Olive oil

For the Eggplant Coating:
πŸ₯š Egg Wash: 4 eggs + 1/3 cup water + Salt & pepper
🍚 1.5 cup flour + 1 tsp salt + 1 tbsp @badiaspices complete seasoning mix + 1 tbsp @badiaspices onion powder + 1 tbsp @badiaspices garlic powder
🍞 Seasoned Italian breadcrumbs 

🌽 Corn or vegetable oil for frying
πŸ₯— Arugula 
πŸ§€ Shave and grated Parmesan cheese

Let’s make some delicious breaded Eggplant Caprese Stacks!

πŸ… I like to start by making the blistered tomatoes, so they can ready by the time I finish preparing the eggplant.
In a baking dish add the grape or cherry tomatoes, smashed garlic cloves, basil, thyme, olive oil and salt, toss and pop them in the oven. Bake on 425F until tomatoes softened and fragrant, about 35 minutes.

πŸ₯š To make the egg wash:
In a bowl, whisk together the eggs, water, salt and pepper, until well combined.

🍚 Season the flour with salt, @badiaspices onion powder, @badiaspices garlic powder, @badiaspices Complete Seasoning mix, and set aside.
Add the seasoned breadcrumbs to a bowl and set aside.

πŸ† Slice eggplants into ΒΌ inch-thick slices; and there is no need to peel them. 
Dip slices first in flour, then egg wash, then coat them well with the seasoned breadcrumbs.
Fry in hot oil a couple of minutes on each side until golden. Drain on a paper towel lined plate.

πŸ₯— To assemble the stack, I lay down some arugula first on the plate, followed by a crispy eggplant slice, a tablespoon or two of sliced roasted peppers, slice of mozzarella cheese, then another slice of breaded eggplant, a few blistered tomatoes or a slice of Heirloom tomato, a slice of mozzarella, then repeat! 

πŸ§€ At the end, I topped it with more grated and shaved parmesan cheese and a drizzle of balsamic glaze or pomegranate molasses.
